Oatmeal banana cookies are packed with fiber, protein, and natural sweetness from the bananas and honey, and they make a great treat for after school or as a snack on the go. I also love they are easy to make and can be customized with your child's favorite add-ins, such as chocolate chips or chopped nuts. Plus, you can feel good about your kid reaching for one of these instead of a less healthy treat!

Oatmeal Banana Cookies

Ingredients:

  • 2 ripe bananas
  • 1 cup rolled oats
  • 1/4 cup almond butter
  • 1/4 cup honey
  • 1/4 cup raisins
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • Pinch of salt
  • Optional: Chocolate chips or chopped nuts

Directions:

  1. Preheat oven to 350 degrees and line a baking sheet with parchment paper.
  2. In a large bowl, mash the bananas with a fork until they are smooth.
  3. Add the oats, almond butter, honey, raisins, vanilla extract, cinnamon, and salt to the bowl with the bananas. Stir everything together until well combined.
  4. Use a spoon or cookie scoop to drop the dough onto the prepared baking sheet, spacing the cookies about 2 inches apart.
  5. Bake the cookies for 12 to 15 minutes or until they are lightly golden brown on the bottom.
  6. Let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
